This week, we’re looking at our New Year resolutions, and there has never been such a rush to the salad and vegetable aisles in the supermarket.
While you might be fighting for office fridge space to house your swanky new lunchbox, don’t let yourself down with the same ham sandwich or lacklustre salad.
Why not try mixing up a fresh fruit with your salad, and prep yourself this watermelon, feta and rocket salad from Ocean Spray for a delicious bite.
For those who want an extra protein kick, add a chopped chicken breast to the mix.
Watermelon, Feta and Rocket Salad
Preparation Time: 15 minutes
Makes 6 servings
Ingredients:
SALAD
- 200g rocket, washed and dried
- 1/4 watermelon, cubed and drained for 10 minutes
- 150g diced feta cheese
- 75g Ocean Spray Craisins Original Dried Cranberries
- 1 red onion, sliced
Dressing:
- 60ml vegetable oil
- 3 tbsp Ocean Spray Cranberry & Blueberry Juice Drink
- 1/2 tsp salt
- 1/4 tsp freshly cracked pepper
Directions:
- Combine all salad ingredients in large bowl.
- Combine dressing ingredients in a small glass mixing bowl using wire whisk.
- Pour dressing over salad; toss well to coat.
