When it comes to cheese, we can’t get enough of it. From the wonderfully strong Roquefort to the mild Tomme de Chèvre – the list of amazing cheeses is very long. In this new feature for all the cheese lovers out there, we’re looking at some our favourite and tasty cheeses from across the world. To kickstart we’re looking at one of Ireland’s most delicious farmhouse cheeses:

Cashel Blue

Origin: Ireland Cashel Blue is the original Irish Farmhouse cow’s milk blue cheese, created by J&L Grubb Ltd’s founders, Jane and Louis Grubb in 1984. The cheese, which is softer blue cheese, was developed as an alternative to the traditional and stronger Blue Stilton. While remaining a 100% family owned business and originally consisting of just Louis and Jane, the team now comprises of 20 members. "Throughout this paste there is a blueing often referred to as having marble-like pattern" writes Sergio and Sarah Furno (Cashel Blue Maturers and Selectors). "The rind, which with time can develop a film of surface mould is untreated and is therefore edible". Why it’s so tasty: The Cashel Blue is not too strong, it's firm but with a creamy and tangy flavour. As it gets older it reaches an even greater creaminess and a much rounder flavour as it continues to mature. Combined with natural honey and crackers, it’s an absolute treat.
