Fancy some delicious comfort food that’s also good for you and low in ProPoints? Why not try this yummy recipe for cheesy pesto mushrooms?

Ingredients
Low fat cooking spray
110g large field mushrooms, stalks removed
25g soft goat’s cheese
15g fresh wholemeal breadcrumbs
For the pesto:
15g pine nut kernels
15g chopped fresh flat leaf parsley
15g Parmesan cheese, chopped roughly
1 small clove of garlic, crushed
Method
To make the pesto, dry the pine nuts for 2-3 minutes in a non-stick frying pan, making sure you stir them regularly until they turn a golden colour.
Next place the parsley, pine nut kernels, Parmesan cheese and garlic into a small food processor, liquidiser or you can use a hand-held blender. Blend them into a rough paste.
Preheat the grill to a medium heat and line the grill pan with foil. Spray the topside of the mushrooms with the cooking spray, then grill them for about 2 minutes until they start to soften. Turn them over, spray the underside with the cooking spray and then cook for a minute or so, until they appear juicy.
Top the mushrooms with the pesto and crumble some goat’s cheese over them. Sprinkle the breadcrumbs on top and grill again for another 1-2 minutes until they start bubbling. Serve warm and enjoy!
Cook’s Tip: For a slightly larger meal serve the pesto mushrooms with 40g dried pasta, cooked and tossed with 2 teaspoons of snipped chives for an extra 4 ProPoints per serving.
