The building was put on the market for €1.9 million in 2016 and was bought for €1.6m by developer Gerry Conlan.
He plans to turn the building into a 39-bedroom hotel, and add an additional storey made entirely out of glass.
However, according to Fora Mr Simms Olde Sweet Shoppe won't be gone forever, as it's moving location to the Ilac Centre.
The site did have some objections however, as pizza restaurant Skinflint will likely have to move location.
Businessman Kevin Macken, the owner of JoBurger, Crackbird and Skinflint, lodged an objection to the development in October last year as he has a contract to lease the premises until November 2021 for €70,000 a year.
