Recommended serving suggestion:
This chorizo jam tastes delicious in sandwiches and pasta dishes, our favourite is serving it with a cheeseboard.
Method:
- Heat a small pot over a medium heat. Add the chorizo and fry for 4-5 minutes. Turn down the heat to low. Remove from the pot with a slotted spoon leaving the oil behind for maximum flavour.
- Add the onion to the pot and cook for about 5 minutes on a low heat stirring frequently until soft but not coloured.
- Add the chorizo back in to the pot with all of the other ingredients.
- Add the sugar and stir until dissolved.
- Add the rest of the ingredients to the pot and stir.
- Simmer on a low heat for about 25-30 minutes with the lid off until the sauce has reduced and thickened, stirring frequently.
- Turn off the heat and blend to your desired texture with a hand held blender.
- Pour the mixture into sterilised jars using a funnel if you have one.
- This jam will keep in the fridge for 2-3 weeks.
