You don't have to opt for chocolate to satisfy that sweet tooth of yours. In fact, this Lemon Polenta Cake will give you as good a sugar hit and it's gluten-free.
So why not take a leaf out of Ali Honour's book, or should we say take a recipe out of her collection, and get baking? We're certainly going to!
Ingredients:
450g caster sugar
450g butter
225g polenta
450g ground almonds
6 eggs
2 tsp vanilla extract
Juice of 1 lemon
Zest of 4 lemons
1 tbsp baking powder
Method:
1. Preheat oven to 170C/ gas mark 3/ 325f. Butter and flour a 30-cm round cake tin.
2. Beat the butter and sugar until smooth, pale and fluffy. Then stir in the ground almonds and vanilla.
3. Beat in the eggs before folding in the lemon juice, lemon zest, polenta and baking powder.
4. Spoon into your prepared cake tin using a spatula. (You don't want to leave any... except maybe a bit to lick off!)
5. Bake for 40 minutes and then leave to cool. You can enjoy the cake as is or make a sugar and lemon juice syrup to pour over the top while hot (like a lemon drizzle).
