They're easy to make, adaptable and taste unreal whether they're just out of the oven or have been in the biscuit tin for a few days.
There are plenty of delicious cookie how-to's online but one has taken the top spot on Pinterest's list of most-tried recipes.
Say hello to the 'perfect' chocolate chip cookies.
That's literally what they're called and by looking at them, we wouldn't be inclined to argue.
The recipe is by blogger Kim Lange of The Baking Chocolatess and is genius in its simplicity.
These little guys aren't trying to be fancy or healthy or anything other than simple, lovely chocolate chip cookies.
To get the best results, Kim recommends making sure your butter is nice and cool, not melted, before you use it and says to use fewer chocolate chips if your cookies are too flat.
Perfect Chocolate Chip Cookies
Ingredients
1 1/2cupsall-purpose floursee notes below
1teaspoonbaking soda
1/2teaspoonsalt
1/2cupunsalted buttersee notes below, room temperature
1/2cupfirmly packed light brown sugar
6tablespoonsgranulated sugar
1large egg
1teaspoonvanilla extract
2 1/4cupssemisweet chocolate chips
Method
Preheat the oven to 350°F/ 180 C and grease two baking trays or line with baking paper.
In a medium bowl, sift the flour, baking soda and salt together.
In another large bowl, using an electric mixer at medium speed, beat together the butter, and sugars about two minutes until smooth.
Add the egg and vanilla and mix on low speed until mixed in.
Gradually add the flour mixture and mix in until just incorporated. Do not keep mixing - do not overmix.
Add chocolate chips and stir with a wooden spoon, again no overmixing, just until incorporated.
Chill dough if dough is warm.
Using a small or large ice cream scoop or heaping tablespoon, drop the dough onto the prepared baking trays, 6 to 8 per pan, depending on size you are making.
Bake the cookies, one tray at a time, until the bottoms and edges are lightly browned and the tops feel firm when lightly touched.
For small cookies, bake 8-10 minutes. For large cookies, bake 10-13 minutes.
Let the cookies cool for five minutes on the baking trays, then transfer the cookies to wire racks to cool completely.
