Hear me out, alright.

The '70s were a wild time. There was a recession on. Divorce was illegal. People were deep frying milk in their kitchens and feeding them to their children as a delicious and exciting treat. No, really. They were. Deep fried milk is a thing. I swear. I did not make it up. But I did make it - and it was, surprisingly, not the worst thing I've ever put into my mouth. For this week's Kitchen Crusade, I decided to try an old housewives' classic and fry up some milk in a load of breadcrumbs. But how does milk fry? I hear you wail. It's a liquid, it could never. Well actually, it could. You just need to throw a load of corn flour into it and whack it in the fridge to set for a couple of hours before you get frying. Simple, sorta. https://www.instagram.com/p/CAaABFtjaUB/ The end result was, eh, questionable to say the least - but still entirely edible. Kind of like a panna cotta... but just a bit more shit. Deep fried milk  You'll need (makes 12): 

• 1 and a half cups of milk
• 1/4 cup granulate sugar
• 1/4 cup corn flour
• 1/2 tbsp butter
• 1/2 cup panko breadcrumbs
• 1 egg
• 1/2 tsp vanilla extract
• 1/2 tsp cinnamon or nutmeg
• A load of cooking oil

Method: 1. Combine the milk, sugar, and corn flour in a sauce pan over a medium heat until thick. Stir in the vanilla, cinnamon, and butter and transfer to a dish for refrigerating. 2. Allow the milk to set for at least three hours, or overnight if you need to. Once set, cut into equally sized squares and set aside. 3. Whisk an egg in a bowl and pour breadcrumbs into another separate bowl. Heat the cooking oil to 180 degrees in a high rimmed pan to prepare for deep frying (if you don't have a thermometer handy, you can use the end of a wooden spoon to check the temperature. If small bubbles emerge once the wood is inserted, the oil is hot enough. If frantic bubbles emerge, the oil is too hot). 4. Cover the milk slices in egg and then breadcrumbs. Use a basket utensil or tongs to place the milk in the oil to deep fry them. 5. Remove each piece from the oil after about 40 seconds and repeat.
