Irish food critic, Caroline Byrne told Dermot and Dave on Today FM that, in order to achieve the quintessential Irish breakfast, you need to have poached eggs, some good quality sausages and bacon but sadly, one classic item doesn't make the cut. Beans are banned. Byrne says you need good quality breakfast meats, proper good pork sausages and rashers from a butcher. Poached eggs get the nod over fried eggs because the latter just leaves too much grease on your plate when you're finished. Don't forget your toast either; the bread and butter are just as important as the rest of the items on the bill and they can really make or break the fry.
